Traditional Russian Sour Cabbage (Sauerkraut) Soup

Fresh cabbage soup or shchi (SHEE) and sour cabbage ( sauerkraut ) soup or kislye shchi are two traditional Russian soups. There also is a green shchi made with sorrel, spinach, and other greens, which is known as zelyoniye shchi in Russian. As with most dishes, the recipes vary from cook to cook and from region to region. This sour cabbage soup recipe is made with fresh pork shoulder and smoked pork spareribs. Some cooks make theirs with beef brisket and cracked beef marrow bones.

Traditional Russian Fish Soup Recipe - Ukha

There are as many recipes for traditional Russian fish soup, known as or uha , as there are cooks in Russia. It can be made elegantly with clear fish stock and served with a side of mini fish dumplings known as pelmeni or mini fish pies ( kulebiak ). Or it can be very rustic and flavorful as I have done here. This is my adaptation using walleyed pike, but any white-fleshed or even salmon can be used. Traditionally, it is made with fish heads and bones as well as different types of fillets. This soup is hearty enough to be eaten as a main course. Ingredients 2 pounds cod , or pike, perch, or salmon fillet, cut into 2-inch pieces 1/2 pound fish heads, and/or bones 8 cups water 2 medium onions , sliced 1 stalk celery , chopped 2 large carrots , sliced Black peppercorns , to taste 1 bay leaf 2 sprigs parsley 1 tablespoon salt , or to taste Fresh dill, optional, for garnish Chives, chopped, optional, for garnish Green onions, chopped, optional, fo

Soup is a traditional dish of Russia. It was prepared at all times. Soups were called bread and chowder. The loaves included cabbage soup, fish soup, hookah, borscht and solyanka. There were 60 types of cabbage soup alone: green, lazy, empty, with meat, with mushrooms, with fish, daily. In neighboring countries, there were even legends that Russians freeze cabbage soup for travelers on the road, and the dish only gets tastier from that.

Traditional Russian Kidney-Pickle Soup (Rassolnik)

This traditional Russian soup recipe can be made with veal or lamb kidneys (although some use pork or beef kidneys) and benefits from tart sorrel leaves along with pickles and their juices. This brining liquid is known as rassol from which the soup gets its names. Rassolnik or rassoljnik, as it is known, varies from family to family and region to region. Some include barley and potatoes and is so thick, a spoon can stand up in it. Others are made with prime cuts of meat instead of offal, and others add purchased bottles of rassol toward the end of cooking instead of relying solely on the pickles and sorrel for the much-desired sour taste. What is common is the belief that rassolnik is a hangover cure because rassol contains vitamins which help the body to hold water and counteract the dehydration produced by over-imbibing, which causes hangovers.
